Rome could easily have achieved Game of Thrones's popularity. It’s a shame that it was canceled after only two seasons. Rome never got the audience it needed to keep it on the screen and it was crazy expensive to produce. Good news is, you can still watch 22 episodes of this excellent series on HBO Go or Amazon on Demand.
To answer your question, you can either stop there or watch until season 6, if you really want to go further you can watch until season 7, and if you like to suffer, you can watch up until season 8 episode 2. But do not and I repeat DO NOT watch the last 4 episodes, they are the reasons nearly 2 million people signed a petition to remake season 8.

One of the things about game of thrones is that it has existed for a really long time, has a deep lore, and as a result there is an amazing community that has built up around it invested in fan theories. Some of these are great, super well done, and super fun. It also means a few other things.
Game of Thrones goes from some of the best television to some of the worst television. The show isn't bad, it just becomes disappointing. Black Sails, Breaking Bad and Six Feet Under if you're looking for shows the get better right through to the end credits. Ahh breaking bad, only my favourite show ever!
